Berry mini muffins with raspberry & white chocolate pancake mix

Ingredients:

1 cup Adelia Fine Foods Raspberry & White Chocolate Pancake Mix
3/4 Cup Milk of choice
1/4 Cup fresh strawberries, finely diced
Coconut oil spray or olive oil spray

Method:

  1. Preheat oven to 180C.
  2. Place all ingredients into large mixing bowl, whisk until combined.
  3. Spray silicon mini muffin tray lightly with coconut oil spray, spoon mixture evenly into each mould.
  4. Place in oven and bake for 10-15min until firm and golden.
